Free Betty Crocker Gluten-Free Dessert Mixes

I found the Betty Crocker Cake Mixes in early July and Becca has been busy making herself Chocolate Chip Cookies. They are really good and easy to make. I first found them at Hy-Vee $4.09 and the best price is at our small town Piggly Wiggly at $3.89.

For those who don't know, I have Celiac Disease, so do both my parents, all but one sibling, my six biological children now all have inherited my genes. Kristy and Ian just joined the ranks of following a Gluten-free diet this year.

Get a FREE Gluten-Free Mix by calling General Mills at 1-800-446-1898 and choose option 4 to speak with a representative. Tell them you are calling regarding the gluten-free coupon. They will ask for your name, address and 2 simple questions. It's that easy, just remember to call during normal business hours.

I can't wait to see if there will be on-line coupons or Sunday coupons this fall. After 28 years of Gluten-Free living, I can't believe I can once again make a Betty Crocker Cake or Cookie Mix :)

Thank You Betty Crocker and General Mills--Gluten-Free Foods

Betty Crocker Gluten-Free Mixes: Brownies, Chocolate Chip Cookies, Devils Food Cake and Yellow Cake Mixes now available.

Betty Crocker has gone Gluten-Free :) I found these yesterday at Hy-Vee for an amazing $4.09.
It may seen high for most, but when you shop and eat Gluten-free this is $2 to $4 less than other mixes that are available.

At long last a Major Food Manufacturer has gone Gluten-Free. I have passed up Betty Crocker coupons for the last 28 years as I have Celiac Disease along with ALL 6 of my biological children, my parents, and most of my siblings. Gluten-free mixes are available in health food stores and from small companies but ignored by the major manufacturers until now.

Thank you Betty Crocker for the gift of having simple baking mixes and priced fairly. Maybe I will even be able to use a coupon soon!!!

General Mills Gluten-Free Chex
One of the disadvantages of being Gluten-Free is that there were no cereals we could eat that didn't have sugar added. Almost all had Barley Malt added and even Rice Krispies was off limits.
“For the first time, people looking for a tasty, gluten-free cereal can shop the main cereal aisle at their market without paying a premium. General Mills Rice Chex led the way in 2008 as the first mainstream, gluten-free cereal readily available to those consumers who: suffer from celiac disease; are gluten intolerant; or, choose to limit or remove gluten from their diet because of a lifestyle or wellness choice. Without sacrificing quality or taste, GM has taken the requisite steps to ensure against cross-contamination with gluten-containing ingredients and products, and has tested each gluten-free formula based on FDA proposed regulations.

General Mills has now made many of their Chex Cereals Gluten-Free which means I get cereal again and it is vitamin fortified and lastly I can use COUPONS!

The Gluten-Free Chex include Rice Chex, Corn Chex, Honey-Nut Chex, Chocolate Chex, Strawberry Chex, and Cinnamon Chex. The old formulas of the Chex products are mostly off the shelves and we are now spying most of the new Gluten-Free Marked Boxes. At long last we can make our own puppy-chow cereal mix, chex mix and eat cereal in the morning. Becca and Kasja love the Chocolate Chex and carry it around in their little cereal containers for easy snacking.

With this weeks double coupons I will be picking up inexpensive Rice Chex, Chocolate Chex and Honey Nut Chex at Kmart. Who would ever have believed that I can double coupons on cereal?

Check out the Gluten-Free Chex webpage for Gluten-free Chex Receipes.

Thank you General Mills for caring about those who eat Gluten-Free and making products we now can utilize and even more important, joining with the Celiac Disease Foundation and the Celiac Sprue Association raising awareness to the disorder. Recent research now estimates that 1 in 100 Americans are now affected with the disorder, and many will not know they have it.

Gluten-Free Baking--Banana Bread

My friend Vickie and I have found a new recipe (from an antique Betty Crocker Cookbook) for Banana Bread and checked out the Gluten-free Baking Mix that touts you can add it to your regular recipe cup for cup. But reading the literature that comes with it, it requires a little more liquid and longer baking times. We made it two days ago and this is our polished recipe.

The Gift Of Life Gluten-Free Baking Mix can be used in Regular Recipes substituted Cup for Cup and produces as Baked goods than cannot be distinguished from Wheat. Even my Non-Glutimanic husband could not tell the difference!!

Gluten-Free Banana Bread
--Makes 3 Regular Size Loaves

1 2/3 cups of sugar well creamed together with 2/3 cup margarine or butter.
Add 5 eggs and cream together with the sugar and margarine mixture.
Add 5 ripe well mashed medium size bananas, mix well.
Add 6 T Lactose-free milk and 1 tsp Apple Cider Vinegar. (you can substitute soy milk for those who are CFGF free) mix again. ( *many Celiacs have trouble handling lactose, so I regularly bake and cook with LF milk)

Then add 3 cups of Gift of Nature All Purpose Gluten-free Flour Blend to the mixture and mix well.

Then add 1 cup more of the Flour Mix before mixing add 2 tsp. GF Baking Powder, 1 tsp. baking soda, 1 tsp. sea salt. Mix into the first ingredients, and 1/3 cup water if needs more moisture.
You can add 1 cup chopped nuts if desired.

Put into three greased Regular Size Loaf Pans and
Bake in preheated oven at 350 degrees for 50 minutes and keep checking at 10 minute intervals until the toothpick comes out clean. We found that my loaves took an additional 20 minute baking times depending on the oven and size.

We put foil over the pans after it was brown to not over-bake the top and get it baked through.

** The baking mix works amazing, I was skeptical about the price at a whopping $33.99 for 10 pounds (30.66 cups) or $1.34 a cup, but it makes it easy to get a product that is as close to wheat that I have found in my 28 years of having to eat Gluten-free. I have seldom liked baking as it is very hard to get all the different flours etc. to work and it takes so much time and work, with several kids with special needs who needed consistant monitoring I had to have simple and time sensitive recipes. This is the product to make it EASY and not frustrating.

We figured that it costs me about $10.50 for six loaves of Banana Bread or $1.75 a loaf. We doubled the recipe when I found a bag of ripe bananas for $1.42. I should have bought two and froze them for another time.

With Gluten-free baked products beginning at $4.50 to over $12.00 a product, even the mixes can cost that much. With all that into consideration, this mix is a bargain especially for the new Gluten-free baker or Mom's with time constraints.
