A lunch favorite and inexpensive fast meal at our house are Gluten-free Tuna Melts.
Can of Tuna
Chopped fresh onion
2 Tablespoons of Dill Relish or Chopped up Dill Pickles
4 or 5 Tablespoons of Gluten-free Salad Dressing
Your favorite shredded Cheese
Mix ingredients together. Spread on top of Slices of Udi's Sandwich Bread or your favorite Gluten-free bread. I love using older dried out bread instead of throwing it out.
Put in your Broiler and watch carefully. A toaster oven works well also. Remove once the cheese melts.
These small tuna melts are incredibly filling.
